BEST CHICKEN ENCHILADAS EVER!



No kidding. These seriously are the best enchiladas ever, and it’s all due to a special (and easy) homemade enchilada sauce that will rock your socks off.

INGREDIENTS:
  • 2 tablespoons avocado oil (or any mild oil)
  • 1 small white onion, peeled and diced
  • 1.5 pounds boneless skinless chicken breasts, diced into small 1/2-inch pieces (*or see substitution below for using pre-cooked shredded chicken)
  • sea salt and black pepper
  • 1 (4-ounce) can diced green chiles
  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 8 large flour tortillas
  • 3 cups Mexican-blend shredded cheese
  • 1 batch red enchilada sauce, or 1 can store-bought enchilada sauce
  • optional toppings: fresh cilantro, diced red onions, avocado, sour cream
DIRECTIONS:
  1. Preheat oven to 350 degrees F.  Prepare your enchilada sauce, if making homemade.
  2. In large saute pan, heat oil over medium-high heat. Add onion and saute for 3 minutes, stirring occasionally.  Add diced chicken and green chiles, and season with salt and pepper.  Sauté for 6-8 minutes, stirring occasionally, or until the chicken is cooked through.  Remove from heat and set aside.

Keto Lemon Bread



This Keto Lemon Bread recipe reminds me of Starbucks glazed lemon bread, but with a fraction of the carbs

INGREDIENTS
  • 6 eggs
  • 9 tbsp butter, melted and cooled
  • 2 tbsp cream cheese, softened
  • 1 tsp vanilla
  • 2 tbsp heavy whipping cream
  • 1/2 cup + 2 tbsp coconut flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 2/3 cup Swerve Granulated or Monkfruit
  • 2 zest of 2 lemons (reserve 1 tsp for the glaze)
  • 4 tsp fresh lemon juice
For the Glaze
  • 2 tbsp Swerve Confectioners or Monkfruit Powdered
  • 2 tsp fresh lemon juice
  • 1 tsp lemon zest
  • smash of heavy whipping cream
INSTRUCTION
  1. Preheat oven to 325 and line bread pan with parchment paper. 
  2. Melt butter and allow it to cool.
  3. Beat eggs, Swerve, cream cheese, heavy whipping cream, vanilla, salt, and baking powder until combined.

Crazy Crust Pizza - our new favorite pizza!! No rolling out dough - the crust is made from a liquid batter. Top the pizza with your favorite toppings. Flour, salt, Italian seasoning, eggs, milk, pepperoni, sausage, ham, pizza sauce and mozzarella cheese. We LOVE this pizza! We've been making it once a week for the past month. INGREDIENTS:
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1/8 teaspoon pepper
  • 2 eggs
  • 2/3 cup milk
  • 1/2 pound pork sausage, cooked and crumbled
  • 1 cup pepperoni slices
  • 1/3 cup diced cooked ham
  • 1-1/2 cups pizza sauce
  • 2 cups shredded mozzarella cheese
INSTRUCTIONS:
  1. Preheat oven to 425ºF. Lightly spray a 15x10-inch rimmed baking sheet with cooking spray. Set aside.

Easy Apple Fritters



There are few things as delicious or as comforting as a warm homemade dessert. These Easy Apple Fritters are a home run any time of the year!

INGREDIENTS
  • 2-3 peeled apples (1½ cups when diced)
  • 1 cup flour
  • ¼ cup sugar
  • ¼ tsp salt
  • 1½ tsp baking powder
  • ⅓ cup milk
  • 1 egg
  • 2 TBS cinnamon sugar mixture (2 TBS sugar and 1 tsp cinnamon)
  • Oil for frying the fritters
INSTRUCTIONS
  1. Combine the flour, sugar, salt and baking powder, and whisk until combined.
  2. In a small bowl whisk the milk and egg until combined, add into dry ingredients and mix until just incorporated.
  3. Toss the apple chunks with the cinnamon & sugar and dump the mixture into the batter, stir just a bit to move apples around.

Chicken Cordon Bleu Quesadillas



Chicken Cordon Bleu Quesadillas are every thing you love about the classic in a new fuss free version! There are still those amazing layers of savory ham, gooey cheese, hearty chicken, and even a creamy Parmesan Dijon Sauce! It's heavenly in a hurry!

INGREDIENTS
QUESADILLAS:

  1. 1 8-10 inch flour tortillas
  2. ¼ c. grilled chicken breast, sliced
  3. 2-3 slices deli ham
  4. 4 slices of Swiss or Provolone cheese
  5. 2 T. toasted breadcrumbs
  6. 2 T. melted butter

PARMESAN DIJON SAUCE

  • 2 T. butter
  • 1 T. flour 1 cup milk
  • 1 chicken bouillon cube
  • 1 tablespoon Dijon mustard
  • Dash hot sauce, optional
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

ISTRUCTION

  1. To make the sauce melt butter in a medium sized saucepan. Whisk in flour and add chicken bouillon and cook for 1-2 minutes. Slowly add milk while whisking. Add mustard and hot sauce. Continue cooking and whisking for about 5 minutes or until it’s thickened. Remove from heat and add parmesan cheese and stir. Keep warm over low heat.
