5 Minute Buffalo Chicken Wraps



Spicy buffalo chicken wraps with ranch dressing are bursting with flavor and made in just 5 minutes! 

INGREDIENTS
  • 2 cup cooked chicken shredded or chopped (rotisserie, shredded, or grilled)
  • 1/2 cup buffalo sauce or 1/3 cup hot sauce + 2 tablespoons melted butter
  • 1 cup shredded lettuce
  • 1/4 cup ranch or blue cheese dressing
  • 4 medium flour tortillas
  • Optional fillings: tomato onion, shredded cheese
INSTRUCTION
  1. In a large bowl, combine the cooked chicken and buffalo sauce until the chicken is fully coated with the sauce.

INGREDIENTS
  • 1 Cup Ricotta
  • 1/2 Cup Parmesan
  • 1 Egg
  • 1 Tablespoon Italian Seasoning

  • 2 Cups Marinara * I used my low carb pizza sauce
  • 1 Cup Mozzarella
  • 5 Chicken Breasts medium
  • Fresh Basil to serve
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. In a bowl, combine ricotta, parmesan, egg, Italian seasoning, salt and pepper. Set aside, this is your “lasagna stuffing”.
  3. Generously salt and pepper each side of the chicken breast and gently pat to adhere.
  4. Slice chicken breast in half to form a “pocket”.

Baked Cheesy Chicken Pasta



Creamy Baked Cheesy Chicken Pasta that is so easy to make. Made with two types of cheeses, this is the ultimate comfort food casserole for dinner. 

INGREDIENTS
  • 1/2 lb pasta (I used rotini)
  • 1 tsp olive oil
  • 2 large boneless, skinless chicken breasts
  • salt and pepper to taste
  • 5 Tbsp butter
  • 5 Tbsp all-purpose flour
  • 3 cloves garlic, minced
  • 3 cups milk
  • 3/4 cup cheddar cheese, shredded
  • 3/4 cup Parmesan cheese, grated
INSTRUCTION
  1. Preheat the oven to 400˚F. Lightly grease a baking dish.
  2. In a medium saucepan, boil the pasta until al dente. Set aside.
  3. Meanwhile, on a skillet, heat the olive oil. Season the chicken with salt and pepper, and cook until the insides are no longer pink. Remove from the skillet, and slice into small pieces. Set aside.
  4. In a medium saucepan, melt the butter. Add in the flour and garlic, and mix together for about 1 minute. Gradually add in the milk, whisking constantly. Bring the sauce to a simmer, whisking constantly until the sauce thickens.

Baked Chicken Wings - Extra Crispy, Like Deep-Fried



A recipe for the best baked chicken wings that are extra crispy on the outside and very tender and most on the inside.

INGREDIENTS
  • 2 lbs chicken wings (tips removed, separated into wingettes and drumettes)
  • 1 Tbsp BAKING POWDER (whatever you do, do NOT use baking soda)
  • 1 tsp kosher salt (plus more to taste)
  • 1 Tbsp butter (melted)
  • 1/3 cup hot wing sauce (e.g. Duff's hot sauce)
INSTRUCTION
  1. Preheat oven to 450F
  2. Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  3. Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
  4. Lay the chicken wings on the rack, leaving space between the wings.

Crispy Oven-Baked Chicken Wings



Toss out that deep fryer, just like last year’s jeans. We’ve got the solution to crispy chicken wings without the hassle of deep frying. These ones are baked but use a secret technique to make them extra crisp.

INGREDIENTS:
  • 10 whole chicken wings, cut into flats and drumettes (here's how to do it). Discard tips or use for a stock. That leaves you with 20 wing pieces total
  • 1 Tbsp. aluminum-free* baking powder (NOT baking soda)
  • 1/2 tsp. salt
  • sauce or dry rub
DIRECTION:
  1. Preheat oven to 250°F.
  2. Place a rack onto a cookie sheet.
  3. In a large bowl, toss the flats and drumettes with the baking powder and salt. Place wings on the rack in single layer and cook for 30 minutes.

Instant Pot Garlic Parmesan Chicken



A fast and easy chicken dinner with a creamy garlic parmesan sauce with chopped spinach. We like to eat this chicken and sauce with fettuccine noodles or with mashed potatoes. 

INGREDIENTS
  • 2 Tbsp butter
  • 1 small yellow onion, diced
  • 4 large garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 8 oz sliced mushrooms (optional)
  • 1 1/2 lbs boneless skinless breasts sliced into 1/2 inch filets 
  • 1 cup half and half
  • 2 Tbsp flour
  • 1/2 cup parmesan cheese
  • 3 oz coarsely chopped spinach
  • Salt and freshly ground pepper
To make with pasta:
  • 10 ounces uncooked fettuccine noodles or linguine noodles
  • 3 cups water
INSTRUCTIONS
  1. Turn your Instant Pot to the saute setting (more). When the display reads HOT add in the butter. Once the butter is melted add in the onions and saute for about 3-4 minutes. Add in the garlic and saute for 30 seconds. Add in the chicken broth, garlic powder, pepper and salt. Stir. Add in the mushrooms (if using) and chicken.
  2. Optional: If you want to cook pasta at the same time and in the same pot you can. Just get a pan that will fit inside your Instant Pot* and fill it with 3 cups or water and then break 10 ounces of fettuccine or linguine noodles to fit inside the pan (see my note below). Carefully place the pan on top of the chicken. I use a homemade silicone sling that I cut from a silicone baking mat* to lower my pan down onto the chicken. You can also make a foil sling.

Juicy Oven Baked Chicken Breasts



Simple and easy method for how to make perfectly juicy and deliciously seasoned oven baked chicken breasts.

These juicy oven baked chicken breasts come out perfect every time! Say goodbye to dry chicken with this easy recipe for tender & flavorful chicken breasts. 

INGREDIENTS
FOR THE CHICKEN BREASTS
  • 4 (1 pound) boneless, skinless chicken breasts
  • 4 cups lukewarm water about 90 to 105 degrees Fahrenheit
  • 1/4 cup salt
  • 1 tablespoon olive oil
CHICKEN SEASONING BLEND
  • 1/4 teaspoon salt, (optional - chicken will have absorbed some of the salt from the salted water)
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon smoked or sweet paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried parsley
  • fresh chopped parsley, for garnish
INSTRUCTION
  1. Preheat oven to 425F.
  2. Place chicken breasts in a large bowl and set aside.
  3. In a large measuring cup or a mixing bowl combine lukewarm water and salt; stir and pour over chicken breasts. Set aside for 20 to 30 minutes. You can also also cover the bowl and refrigerate for 2 hours.
  4. In the meantime, prepare the Chicken Seasoning Blend.

Teriyaki Chicken Cones

INGREDIENTS
  • 5 uncooked flour tortillas, 8-inch
  • vegetable oil
  • 1 1/2 lb chicken breasts (boneless, skinless), cubed
  • 1/4 cup honey,
  • 1/4 cup soy sauce
  • 2 tbsp vinegar, apple cider or rice
  • 1/2 tsp ginger powder, or minced fresh
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • salt and pepper to taste
  • 2 cups broccoli, cut into florets, optional
INSTRUCTION
  1. Preheat oven to 400°F. Set aside a large muffin tin or baking sheet.
  2. In a small bowl, whisk together honey, soy sauce, ginger powder, garlic, vinegar and cornstarch.
  3. Place tortillas on a work surface and cut into halves.
  4. Form each half into a cone shape, and fasten with a toothpick.

Crock Pot Thai Chicken Curry



Crock Pot Thai Chicken Curry is one of the easiest meals to make and is so tasty. Curry paste, coconut milk, and ginger add a ton of flavor to this healthy, low-cal, and naturally paleo + gluten-free dinner. Your family will LOVE it!

In this recipe, I like to use boneless, skinless chicken thighs. I find they have more flavor than breasts, and they're usually a lot more reasonably priced, too. If you have chicken breasts on hand, you can definitely use those instead.

INGREDIENTS
  • 1 – 14 ounce can coconut milk, plus 1 can of water (see notes)
  • 2–4 tablespoons Thai red curry paste (see notes)
  • 1 tablespoon soy sauce (gluten free, if needed. Sub coco aminos for paleo and Whole30)
  • 1 tablespoon palm or coconut sugar (or sub maple syrup or brown sugar. Omit for Whole30)
  • 1 tablespoon minced ginger
  • 2 teaspoons fish sauce (use Whole30 compliant, if needed)
  • 3 garlic cloves, minced
  • 1 lb. boneless, skinless chicken thighs, cut into 2–3 pieces
  • 1 large kabocha, cut into 1 – inch cubes (or 1 small butternut squash)
  • 1 medium yellow onion, chopped
  • 1–2 chili peppers, if you like extra heat
  • 1 large bunch of kale, torn into small pieces (roughly 2 packed cups)
  • Optional: cilantro, chili peppers, and lime to serve
INSTRUCTIONS
  1. Place all the ingredients, except for the kale, into your crock pot and stir together well. Set your crock pot to cook on high for 4 hours.
  2. After 4 hours, stir in the kale and let it sit while you prepare the rice, cauliflower rice or quinoa to serve.

  • 3 cups chopped cooked chicken (I used rotisserie chicken)
  • 1 (10.75-oz) can condensed cheese soup
  • 6 cups chicken broth
  • 1 cup milk
  • 2 stalks celery, chopped
  • 2 carrots, thinly sliced
  • 1 (1-oz) package Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
  • 1 (2.25-oz) package Oscar Mayer Real Bacon Bits
  • 1 cup shredded cheddar cheese
  • 8-oz dried fine egg noodles, uncooked
INSTRUCTIONS:
  1. In a large stockpot/Dutch oven, combine cooked chicken, cheese soup, chicken broth, milk, chopped celery, sliced carrots,Hidden Valley Original Ranch Salad Dressing & Seasoning Mix and Oscar Mayer Real Bacon Bits.
  2. Bring to a boil over medium-high heat. Reduce heat to simmer and cook for 20 to 25 minutes, until vegetables are soft.

Teriyaki Chicken Casserole

INGREDIENTS
  • ¾ cup low-sodium soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • ½ teaspoon ground ginger
  • ½ teaspoon minced garlic
  • 2 Tablespoons cornstarch + 2 Tablespoons water
  • 2 small boneless skinless chicken breasts
  • 1 (12 oz.) bag stir-fry vegetables (Can be found in the produce section)
  • 3 cups cooked brown or white rice
INSTRUCTION
  1. Preheat oven to 350° F. Spray a 9x13-inch baking pan with non-stick spray.
  2. Combine soy sauce, ½ cup water, brown sugar, ginger and garlic in a small saucepan and cover. Bring to a boil over medium heat. Remove lid and cook for one minute once boiling.
  3. Meanwhile, stir together the corn starch and 2 tablespoons of water in a separate dish until smooth. Once sauce is boiling, add mixture to the saucepan and stir to combine. Cook until the sauce starts to thicken then remove from heat.

Crispy Parmesan Garlic Chicken with Zucchini



Crispy Parmesan Garlic Chicken with Zucchini is a fantastic one pan meal that the family will love!  The chicken is so tender and breaded with an amazing parmesan garlic crust and the zucchini is sautéed in a delicious buttery parmesan garlic! 

Zucchini is my favorite veggie.  So I get pretty excited when it is actually in season even though I buy it all year long.  My favorite way to eat zucchini is to sauté it until tender.  I could eat it with every meal.

The awesome thing about this recipe is that I had all of the ingredients on hand.  It was dinner time and I was staring in my pantry wondering what I should make.  One of our favorite things is this Crispy Parmesan Garlic Chicken.  My entire family devours it.  We love the crispy flavorful crust on the chicken.

INGREDIENTS
  • 2 Chicken Breasts, sliced in half, or 4 thin chicken breasts
  • 8 Tablespoons butter, divided
  • ½ cup Italian Bread Crumbs
  • ½ cup plus 1 Tablespoon grated parmesan, divided
  • ¼ cup flour
  • 2 medium zucchini, sliced
  • 2 garlic cloves, minced
INSTRUCTION
  1. In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  2. Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.

  • 1 tbsp lemon juice
  • 1/2 tbsp. turmeric powder

Seasoning Ingredients:
  • 2 tsp paprika
  • 1 tsp cumin powder
  • 1 tsp salt

INSTRUCTION
  1. Mix the seasoning ingredients together, and generously rub them onto the chicken thighs. 
  2. Heat the oil in a large non-stick skillet. Add the chicken and sear for about 4-5 minutes on each side.*

Garlic Butter Chicken



Garlic Butter Chicken is a family friendly easy recipe that combines chicken breasts and baby potatoes with fresh garlic, butter and mozzarella.

INGREDIENTS

  • 4 boneless skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • I lb. baby potatoes (if larger than one inch slice in half)
  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves minced garlic
  • 1/2 teaspoon crushed red pepper (or less to taste)
  • 2 teaspoons dried parsley
  • 1 cup shredded mozzarella
  • 1/2 cup shredded Italian blend
INSTRUCTIONS
  1. Preheat oven to 400 degrees. Salt and pepper both side of the chicken breasts and place in single layer in casserole dish. Top with with baby potatoes.
  2. In large skillet melt butter over low heat. Add garlic and cook until fragrant; about 1 minute. Remove from heat and allow to cool for 5 minutes.

KICK ASS CHICKEN LASAGNA

 

An amazingly cheesy chicken lasagna that kicks ass! It is also perfect to take to a neighbor or friend. This is stuff-the-refrigerator food!!!

INGREDIENTS
  • 9 uncooked lasagna noodles
For the Filling:
  • 1 tablespoon olive oil
  • 1½ pounds boneless skinless chicken breast, cut into very small bits (1/2 inch or smaller)
  • ½ teaspoon salt
  • ½ teaspoon black pepper (or to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 12 ounces whole milk ricotta cheese
  • 1 egg
  • 2 ounces grated Parmesan Romano cheese
For the Cheese Sauce:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2½ cups milk (at least 2 %)
  • 4 ounces grated Parmesan Romano cheese
  • 12 ounces shredded mozzarella, divided
For the Mushrooms:
  • 1 tablespoon butter
  • 8 ounces fresh mushrooms, sliced
  • 1 teaspoon oregano
INSTRUCTIONS
  1. Preheat the oven to 350°. Lightly grease a 13 X 9 baking dish (I rub a little olive oil on the bottom and sides).
  2. Cook the lasagna noodles according to package instructions, but only cook halfway (because they will cook more in the oven). Drain and rinse with cold water (stops the cooking process).

Garlic Butter Tomato Baked Chicken with Mozzarella



The easiest garlic butter tomato baked chicken with mozzarella. It’s a one pan recipe that comes complete with roasted sweet balsamic tomatoes, cooked chicken with melty mozzarella and the most fantastic sauce for your quinoa, rice, pasta, or veggies!

INGREDIENTS:
CHICKEN MARINADE:
  • 1 tablespoons EACH: olive oil and white wine vinegar
  • 3 cloves minced garlic
  • ¼ – ½ teaspoon red pepper flakes
  • ½ teaspoon Italian seasoning
  • 4 boneless skinless chicken breasts
BALSAMIC TOMATO PAN SAUCE:
  • 3 cups cherry tomatoes, halved
  • 2 tablespoons EACH: balsamic vinegar and melted butter
  • 1 tablespoon honey
  • 4 cloves minced garlic
  • 2 tablespoons chopped basil
  • ½ teaspoon EACH: onion powder and dried thyme
  • 1- 1½ cups shredded mozzarella cheese
DIRECTIONS:
  1. MARINATE: Add all the ingredients except the chicken breasts into a zip top bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 425ºF.
  2. BALSAMIC TOMATO PAN SAUCE: Add all the ingredients except the mozzarella to an oven-safe baking dish, along with a big pinch of salt and pepper, and stir to combine. Move the tomatoes around the edges and place the chicken breasts in the center.

Stuffed Chicken Marsala

INGREDIENTS
  • 4 medium boneless, skinless chicken breasts
  • 8 slices mozzarella cheese
  • 1 12-ounce jar julienned sun dried tomatoes packed in oil, drained (if you can't find them julienned you can buy sun dried tomato halves and thinly slice them yourself)
  • 2/3 cup shredded parmesan cheese
  • 3 tablespoons oil
  • salt and pepper, to taste
  • 2 teaspoons Italian seasoning
Marsala Sauce
  • 1 1/2 cups marsala cooking wine (may sub chicken broth)
  • 3 teaspoons minced garlic
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • grated parmesan cheese and parsley or thyme for topping (optional)
INSTRUCTION
  1. Preheat oven to 400 degrees. Use a sharp knife to cut a slit horizontally along one side of the chicken breast, being sure not to cut all the way through the chicken - the goal is to make a "pocket".
  2. Fill each pocket with 2 slices of mozzarella cheese, 1/4 of the sun dried tomatoes, and 1/4 of the shredded parmesan cheese.
  3. Pinch together the open side of the chicken breasts and secure with toothpicks. Drizzle chicken with oil, then sprinkle with salt and pepper to taste, and Italian seasoning, rubbing in with your fingers.

This is our most dangerously addictive sauce EVER.
Once you start, you literally can’t stop. We can almost guarantee you’ll be hooked after making it once. (Beware: This is pretty much a gateway recipe to Crack Chicken Tacos and Crack Chicken Dip—which are even more insane.)

To Make this Recipe You’Il Need the following ingredients:
