Broiled Salmon with Thai Sweet Chili Glaze



Salmon fillets quickly marinated in Thai sweet chili sauce, soy sauce and ginger and then broiled until caramelized on top.

INGREDIENTS
  • 1-1/2 pounds (or four 6-ounce pieces) salmon, skin on or off
  • 6 tablespoons Thai Sweet Chili Sauce (best quality, such as Mae Ploy or Thai Kitchen)
  • 3 tablespoons soy sauce (use gluten-free if needed)
  • 1 tablespoon peeled and finely grated fresh ginger
  • 2 scallions, green parts only, finely sliced
INSTRUCTIONS
  1. Set the oven rack 5-6 inches from the top and preheat the broiler.
  2. Make the marinade by combining the sweet chili sauce, soy sauce and ginger in a shallow baking dish. Spoon 1/4 cup of the marinade into a small dish and set aside (this will be the sauce for the cooked fish). Add the salmon fillets, skin side up, to the remaining marinade and marinate for 1 hour in refrigerator.


Soy Glazed Salmon



Soy Glazed Salmon with a savory and flavorful soy sauce mixture. This oven baked salmon recipe is so easy. It takes 10 mins prep time and dinner is ready.

INGREDIENTS
  • 1 1/2 lbs. salmon fillet
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes
  • white sesame, for garnishing
  • chopped parsley, for garnishing
INSTRUCTION
  1. Preheat oven to 375F. Rinse the salmon with cold water and pat dry with paper towels. Cut the salmon into two pieces if they are too big. Transfer the salmon fillets (skin side down) on a baking sheet lined with parchment paper or aluminum foil. 
  2. Combine the soy sauce, oyster sauce, brown sugar, sesame oil and red pepper flakes together. Stir to mix well. 

Blackened Salmon with Avocado Salsa



Salmon seasoned with a tasty cajun spice blend and pan fried until crispy served topped with a cool and creamy avocado salsa!

INGREDIENTS
For the blackened salmon:
  • 1 tablespoon oil
  • 4 (6 ounce) pieces salmon
  • 4 teaspoons cajun seasoning
For the avocado salsa:
  • 2 avocado, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, finely diced
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon lime juice
  • salt to taste
For the avocado and cucumber salsa:
  • 2 avocado, diced
  • 1 cup cucumber, diced
  • 1/4 cup green onion, diced
  • 1 tablespoon parsley, chopped
  • 1 tablespoon lemon juice
  • salt to taste
DIRECTION
For the blackened salmon:
  • Heat the oil in a heavy bottom skillet over medium-high heat, add the salmon, seasoned with the cajun seasoning, and cook until deeply golden brown to slightly blackened before flipping and repeating for the other side.
For the avocado salsa:
  • Mix everything and enjoy on the salmon!

Tuna Salad Recipe



This Tuna Salad Recipe is a winner! It is loaded with creamy avocado, crisp green apples and crunchy almonds. The combination of flavors and textures makes this completely irresistible!
There's some serious chemistry going on in this salad with the addition of apple and avocado. Serve as sandwiches, as a dip, or make tuna melts.

INGREDIENTS
  • 20 oz tuna in water (four, 5-oz cans), well drained.
  • 1 medium onion 1 1/3 cup finely diced
  • 1 medium granny smith apple seeded and diced
  • 1 avocado diced (removing the skin and seed is implied)
  • 1 cup real mayo or to taste
  • 1/2 tsp fresh lemon juice or to taste
  • 1/2 cup sliced almonds or chopped walnuts toasted
  • 1/8 tsp black pepper or to taste
INSTRUCTION
  1. Toast nuts on a dry skillet until golden. Remove from heat and cool slightly.
  2. To drain tuna, I open the lid then press it down firmly over the tuna to drain off as much water as I can squeeze out. If your tuna is too wet, your salad will be wet.
