Tuna Salad Cucumber Boats + Cucumber Nutrition

INGREDIENTS
  • 2 medium cucumbers
  • 2 cans wild-caught white albacore tuna, drained
  • 2 stalks celery, diced
  • ¼ cup white onion, finely diced
  • ¼ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1 teaspoon yellow mustard
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • Optional: fresh garden herbs like parsley, or dill and freshly sliced tomatoes
INSTRUCTIONS
  1. Slice the cucumbers down the middle length wise. Using a spoon, gently scrape out the insides.
  2. Discard (or compost!) the scooped seeds and set the remaining cucumber aside.
  3. Add the tuna to a large bowl. Using a fork, gently mash the tuna until it is flaked.
  4. Add the celery, onion, Greek yogurt, mayo, mustard, salt and pepper (and fresh herbs if you plan to use any).

Tuna Cakes with Jalapenos and Cilantro



These yummy Tuna Cakes with Jalapeño and Cilantro are low on carbs and calories and big on flavor! 

INGREDIENTS
  • 25 ounces canned solid white tuna in water (five 5-ounce cans)
  • 2 large eggs , lightly beaten
  • 1 bunch of fresh cilantro coarsely chopped, plus a few sprigs saved for garnish
  • 1/3 cup , plus 2 tablespoons, plain dry breadcrumbs (or almond meal for a gluten free option)
  • 4 tablespoons Canola mayonnaise (Greek yogurt can be used instead)
  • 3 tablespoons fresh lemon juice (about 1 to 1 1/2 lemons)
  • 3 jalapeno chile peppers , finely chopped, ribs and seeds removed unless you like it a little spicy
  • 1 large onion finely chopped
  • 4 tablespoons extra light olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
INSTRUCTION
  1. In a large strainer, in the sink over a large bowl, add the 5 cans of tuna and let them drain while you prepare the following ingredients.
  2. Sauté the onions for about 8 minutes in a sauté pan, until translucent. Set aside and let cool.
  3. While the onions are cooking, in a large mixing bowl, add the mayo, lemon juice, salt and pepper and whisk till combined. Then add cilantro and peppers to the mixture.
  4. Add the tuna, beaten eggs, cooked onions and breadcrumbs, and mix gently until ingredients just hold together.

Classic Tuna Melt



This easy Classic Tuna Melt is absolutely delicious.
I love this traditional, homemade classic tuna melt. It’s filled with cheese and served hot. So yummy!

I think this recipe is best because it comes from my Nan. It’s amazing how such a simple sandwich can produce so much incredible flavor. You’ll love easy it is to make from scratch. A great option for a quick snack or a hearty dinner for your family on a busy evening.

INGREDIENTS
  • Tuna 2 cans, drained
  • Onion medium size, chopped
  • Celery 1/2 a stalk, chopped
  • Garlic 1 clove, minced
  • Parsley 1 tablespoon, chopped
  • Mayonnaise 3-4 tablespoons
  • Olive Oil 3 tablespoons, divided
  • Mozzarella 1/3 cup, shredded
  • Salt to taste
  • Fresh Black Pepper to taste
  • Bread sliced
  • Butter softened
INSTRUCTIONS
  1. Drain water or oil from tuna, then fork tuna into a medium bowl.
  2. Chop onion, celery, and parsley.
  3. Mince garlic and add ingredients to tuna.
  4. Add mayonnaise, olive oil and mozzarella cheese.

No Mayo Avocado Tuna Melt



No Mayo Avocado Tuna Melt is the perfect lunch to get out of the midweek slump! Filled with solid white albacore tuna and veggies, it’s delicious and easy!

INGREDIENTS
  • 4 slices whole wheat/grain bread
  • 1 can Bumble Bee® Solid White Albacore strained
  • 1/2 Avocado sliced
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 medium tomato sliced
  • 4 leaves red leaf lettuce
  • 4 slices havarti cheese (or other white cheese)
  • 1 TBS butter
INSTRUCTION
  1. In a medium bowl, add tuna, avocado, salt, and pepper; mix using a fork until completely combined.
  2. Make your sandwiches: Place a slice of bread on the bottom and then layer cheese, tuna mixture, tomatoes, lettuce, and another slice of cheese. Top with remaining bread slices. Spread butter on outside slices of bread.
  3. Using a large skillet heated over medium heat; add sandwiches (butter side down), and cook for 3-4 minutes, or until bread is lightly browned. Flip and cook for 2-3 minutes or until bread is browned (usually the 2nd side takes a shorter amount of time to cook).

The Perfect Tuna Melt



THIS TIME, I hid some in an undisclosed location (a locked safe. HA!) and was able to make this perfect Tuna Melt. It’s ooey-gooey and packed full of delicious flavor, and perfect for the nights when you just want to put something on the table super quick or for that lunch date with your friends.

INGREDIENTS
  • Tuna, 2 x 5oz cans, drained
  • Onion, medium size, chopped
  • Celery, ½ a stalk, chopped
  • Garlic (1 clove), minced
  • Parsley, 1 tablespoon, chopped
  • Mayonnaise, 3-4 tablespoons
  • Extra Virgin Olive Oil, 3 tablespoons, divided
  • Mozzarella, ⅓ cup, shredded
  • Bread, sliced
  • Butter, softened
  • Salt and Pepper to taste
INSTRUCTION
  1. Drain water from tuna and put the tuna into a medium bowl.
  2. Chop onion, celery, and parsley. Mince garlic and add ingredients to tuna.
  3. Add mayonnaise, olive oil, and mozzarella cheese. Combine all ingredients until well incorporated. Salt and pepper to taste.

Tuna Patties With Lemon-Dill Sauce



I crave Tuna Patties at times and this is how I make them. Sure hit the spot! I double my Lemon-Dill Sauce as I like lots of it! This is easy, so after work, it's great for a tasty meal. I made this with asparagus and use the sauce on it too! A nice change and perfect summer dish! And my cats love these :)

These tuna patties brought back childhood memories. We loved them then and we really loved these now. They are easy to make and can be a meal on their own. Make them smaller and you've got a yummy appetizer. The lemon-dill sauce is creamy and tangy. It's a nice added touch. 

INGREDIENTS
  • 2 large eggs
  • 2 tsp lemon juice, fresh
  • 1/4 c grated Parmesan cheese
  • 3/4 c Italian seasoned bread crumbs + 1/2 cup
  • 17 oz tuna, canned (one 12 oz and one 5 oz) drained
  • 1/4 c green onions, diced
  • 1/4 tsp ground pepper
  • 2 dash(es) Old Bay seasoning
  • vegetable oil
LEMON DILL SAUCE
  • 1/2 c mayonnaise (can use reduced fat)
  • 1 tsp lemon juice, fresh
  • 1 tsp grated lemon peel
  • 1/2 tsp dill weed
How to Make Tuna Patties With Lemon-Dill Sauce 
  • Mayonnaise, lemon zest, and dill in a bowl. Make the Lemon-Dill Sauce first by just mixing the ingredients together and keep in the fridge until needed. Double recipe if you like a good amount, like me.
  • Tuna, breadcrumbs, and seasonings in a bowl. Beat the eggs and mix the lemon juice in a medium bowl. Stir in the Parmesan cheese and the 3/4 cup bread crumbs. Fold in the tuna and onions and mix well. Add the pepper and Old Bay seasonings.
  • Shaping tuna mixture into six patties.Shape mixture into round 1 inch thick patties, like you would hamburger patties. I was able to make six patties. Put the other 1/2 cup of bread crumbs on a paper plate and hold the patties carefully. Sprinkle the breadcrumbs on both sides to dust them. Carefully shake excess off.
