How to Eat Clean for All 21 Meals This Week (Even If You’re Lazy)



You start every week with the best of intentions. But then by, oh, Tuesday night, you’ve run out of veggies and that pizza on TV looks really good and suddenly you’re elbow-deep in mozzarella sticks and garlic knots. Set up next week for success with this seven-day clean-eating plan. (You’ve got this. Even if you’re lazy.)

MONDAY BREAKFAST: EGG AND VEGGIE BREAKFAST BOWL
It’s all about the runny yolk cascading down the arugula. Every morning should start with such beauty.

4 servings
INGREDIENTS
  • 1 pound Brussels sprouts
  • 1 pound sweet potatoes
  • 1½ tablespoons olive oil
  • 2 cups arugula
  • 4 eggs
  • 2 tablespoon harissa
  • 3 tablespoons apple cider vinegar
INSTRUCTION
  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Cut the Brussels sprouts in half. Dice the sweet potatoes. 
  3. Spread out the brussels sprouts and sweet potatoes on the baking sheet. Drizzle the olive oil evenly over the vegetables; season with salt and pepper.

Clean Eating Pineapple Dole Whip



If you have ever been to a Disney theme park, it is likely that you are well acquainted with a Pineapple Dole Whip! However, if you have never heard of them, it is time you discovered this delicious treat! A pineapple dole whip is essentially like a pineapple frozen yogurt! Now you can make these pineapple treats at home in minutes, with just a few simple and healthy ingredients!

INGREDIENTS

  • 2 cups Fresh pineapple, diced or 1 (20 oz) can diced pineapple, drained
  • 1/4 cup Unsweetened almond milk (or milk of choice)
  • 1 tsp Lemon juice
  • 2 tsp Lime juice
  • 1/4 cup Sweetener [1]
METHOD
  1. The estimated total time to make this recipe is 1-5 Minutes.
  2. Open cans of pineapple, and drain liquid, (if using fresh, cut up fresh pineapple into small chunks).  Place chunks into a ziplock bag and freeze for at least 2 hours, or overnight. Let thaw slightly just before making. (Do this by leaving it out on the counter for about 15 minutes, or microwave for about 30 seconds. You want to just be sure it is not rock solid frozen, so it can blend easily.)
