Easter Chex™ Party Mix



The Easter version of one of our favorite holiday snack mixes, perfect for any party this spring. Chex™ cereal, marshmallows and pretzel twists are coated in vanilla almond bark and sprinkles and tossed with pastel chocolate candies.

INGREDIENTS
  • 6 cups Rice Chex™ or Corn Chex™ cereal
  • 2 cups miniature marshmallows (from 10.5-oz bag)
  • 1 cup mini pretzel twists (from 16-oz bag)
  • 15 oz vanilla candy coating (almond bark) (about 9 cubes from 20-oz package)
  • 3 tablespoons holiday-colored sprinkles or nonpareils
  • 1/4 cup powdered sugar
  • 1 cup holiday-colored candy-coated chocolate candies
PREPARATION
  1. Line large rimmed cookie sheet with waxed paper. In large bowl, mix cereal, marshmallows and pretzels.
  2. In medium microwavable bowl, microwave candy coating uncovered on High 60 to 90 seconds, stirring after 1 minute, until almost melted. Stir until smooth. Pour onto cereal mixture; mix well.

Brie Bites



3 ingredients and 15 minutes appetizer that is perfect Thanksgiving dinner or holiday dinner! Serve them hot with some cranberry sauce or apricot preserves!

Brie Bites are an easy 3 ingredient appetizer that is perfect Thanksgiving dinner or holiday dinner! All you need is some refrigerated crescent dough, brie, egg and 15 minutes! Serve them hot with some cranberry sauce or apricot preserves – the perfect holiday appetizer!

We are always looking for delicious appetizers. Some of our all time favorites are our Spinach and Artichoke Dip and our Totchos!

INGREDIENTS
  • Brie
  • Refrigerated crescent dough
  • 1 egg
  • Cranberry Sauce or Apricot preserves
INSTRUCTION
  1. Preheat oven to 350 degrees.
  2. Cut brie into small cubes (approx. 1/4-1/2 inch cubes).
  3. Unroll crescent rolls onto a baking sheet lined with a silicon baking mat. Separate into triangles. Cut them in half so you have about 16 triangles.

Easy Appetizer Idea: PARTY POPPERS (Make Ahead w/ only 5 Ingredients)



These stuffed mini peppers are SO stinkin’ good and easy to make! I’m always on the hunt for appetizers that can be made ahead of time and easy to take to a gathering, and this one hits the nail on the head.

They remind me of a jalapeño popper only not as spicy, and with more of a crisp and refreshing crunch.

INGREDIENTS:
  • 1 large bag sweet mini peppers (I buy the 2 pound bag)
  • 2 (8 ounce) packages cream cheese
  • 1 package of bacon (cooked and chopped)
  • 2-3 jalapeños (finely diced)
  • 1 1/2 cups shredded sharp cheddar or pepper jack cheese
INSTRUCTIONS:
  1. Remove the cream cheese from the fridge and let it sit at room temperature for about 30 minutes. This will make it easier to mix with the other ingredients later.
  2. Meanwhile, cook the bacon until it’s crispy. I prefer to cook mine in the oven set at 375 degrees on a foil lined baking sheet for about 20 minutes (flip it half way through).
  3. While the bacon is cooking, cut the tops off of the mini peppers and clean out the seeds. You can also take this time to finely dice the jalapeños and shred the cheese if you haven’t already.

Chuy's Creamy Jalapeno Dip Copycat



If you don’t have a Chuy’s near you, you’re missing out. It’s a Tex-Mex restaurant- I can’t say all that much about the food because I’ve actually only ordered it a few times. I’ve liked what I’ve ordered, but mostly, I go there to drink margaritas and eat a vat of their Creamy Jalapeno Dip along with chips.

I LOVE their Creamy Jalapeno Dip. It has just enough spice to satisfy those of us who like a little kick with our food, but it’s not so overwhelming that pickier eaters would need a pitcher of water to wash it down. If you happen to eat there and they bring you your chips and salsa, make sure you ask for the Creamy Jalapeno Dip, too. Usually, I just have to say “And can we have some….” and they interrupt me to tell me yes, they’ll bring me some Creamy Jalapeno.

But because I can’t eat out all the time and because I can enjoy more margaritas at home, I wanted to create my own version of Chuy’s Jalapeno Dip. Of course I went to Pinterest but it was like Golilocks and the Three Million Different Recipes. And none of them seemed quite right. Some had waaaaaay too many ingredients, when if you’ve had the original, you know that while it’s really tasty, it’s also pretty simple.

Copycat of Chuy's Jalapeno Dip

INGREDIENTS
  • 1 whole large jalapeno, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons fresh cilantro
  • 16 oz light sour cream
  • 1 oz package of ranch dressing mix
  • ½ lime, juiced
  • 4-6 tablespoons milk
INSTRUCTION
  1. Combine jalapeno, garlic, and cilantro in blender or food processor.
  2. Pulse until finely chopped.
  3. Add light sour cream, ranch dressing mix, and lime juice and pulse to combine.
